Japanese chef Kazue Takuma, who served as sous chef at the world-renowned three-star Parisian restaurant Le Cinq, will open a patisserie shop called "Libre" in Shirokane, Tokyo, on June 13th.

Takuma was the sous chef (sous chef) responsible for menu development at Le Cinq, which has consistently earned three Michelin stars. Le Cinq is a three-star Michelin restaurant located within the Four Seasons George V, one of Paris's most luxurious hotels, which has the title of Palace, a rank above a five-star hotel. Here, Takuma has captivated gourmets not only in France but around the world.
After returning to Japan, this French chef first chose to open a patisserie. The reason for this was that he wanted customers to easily experience the craftsmanship of his three-star chef. The sweets at Libre, which Takuma has generously poured all of the three-star chef skills he cultivated in France into, not only satisfy with their flavor, but also create something "new," resulting in innovative Western-style pastries that always stimulate all five human senses: perception, touch, and hearing.

The shop's signature dessert, "Fleurée," was invented by Taguma while he was living in Paris. It's a "new kind of sweet," resembling a real fruit. When you split open the fruit, crafted from subtly sweet chocolate, a sauce made with carefully selected fruit and yogurt gelato with pulp spills out. Limited-edition flavors are available each season, and in June, three flavors will be available: "Mango Base + Uwajima Blood Orange," "Strawberry Base + Ishigaki Island Snack Pineapple," and "Coconut Base + Takarajima Banana." Our dishes are made with 100% natural ingredients, without any artificial colorings or seasonings.

The restaurant opens at 6 PM, offering only course meals (¥8,500 excluding tax). Like the sweets, the menu is visually captivating, and the authentic flavors are cultivated in the authentic Italian cuisine. We also plan to operate as a bar after 9 PM.
