The "Gucci Osteria Tokyo Cheesecake" is the first cheesecake to be offered at Gucci Osteria da Massimo Bottura's four stores around the world (Florence, Los Angeles, Tokyo, and Seoul), and is based on an original recipe from Gucci Osteria Tokyo. Made with luxuriously selected ingredients from Japan and Italy, it is a baked cheesecake with a richness and unique flavor that is hard to imagine from its simple appearance.

The star of the dish is Parmigiano Reggiano made by artisans at Caseificio Rosola, a small producer in Italy's Emilia-Romagna region that is a favorite of three-star Michelin chef Massimo Bottura. This Parmigiano Reggiano, aged for over two years using raw milk from healthy cows in the Modena mountain range, is combined with fresh cream from Hokkaido and the refreshing acidity is locked in with organic white balsamic vinegar. The crumble, made with Italian hazelnuts, is an adaptation of the recipe for the traditional Italian baked confectionery Birchi di Dama, and adds a textured accent to the creamy, melt-in-your-mouth cheesecake.
