Enjoy Danish fashion and New Nordic cuisine that are attracting attention from around the world [Copenhagen Trip Day 2]

Mar 3, 2018
In this second installment of journalist ELIE INOUE's Copenhagen, Denmark city report, we'll explore Danish fashion, which is currently garnering global attention, and the evolving cuisine of Scandinavia! (The third installment will be updated on Saturday, March 10th.)

Day 2

For breakfast on Day 2, we had Danish pastries, a bread originating in Denmark. The wildly popular bakery, LAGKAGEHUSE, offers a wide variety of pastries, including jams, chocolates, and cinnamon creams. In addition to Danish pastries, they also offer rye bread, sandwiches, salads, and drinks, and they even have a dining area. This authentic Danish pastry boasts a crispy yet fluffy texture. It's quite sweet, but it's definitely worth trying!

Also, nearby Holly Golightly, a must-see store specializing in vintage and designer brands, is a must-see! While it's vintage, it features many new and unused items, primarily from Danish brands. Diagonally across the street, there is a shop specializing in bags and shoes. They carry conceptual and practical brands popular with Danish girls, such as MARNI and Chloé. All vintage items are one-of-a-kind, so enjoy finding something you'll never see again.

A perfect souvenir is A.C. Perch's, a tea brand with a royal warrant. They offer original teas, processed using a unique method and blended from carefully selected tea leaves from around the world. The small store was packed with locals buying tea by weight, highlighting their long-standing reputation in Copenhagen. If you tell them your favorite flavor, they'll make recommendations, and they apparently have many seasonal items, so be sure to try some teas you can't find anywhere else!

For dinner on my second day, I went to Amass, a New Nordic restaurant opened by the former chef of Noma, which I had been wanting to visit since before my trip. The interior, converted from a warehouse, is modern and stylish, yet has a relaxed and peaceful atmosphere. There's a farm in front of the restaurant, and some of the ingredients are home-grown, making them incredibly fresh. Courses range from approximately 15,000 yen to 20,000 yen, with wine pairings available for approximately 10,000 yen each. I was already captivated by the four types of chips served as appetizers, including porcini and juniper. The menu included a vibrant platter of kale mousse on fermented potato bread, squid caught that day in a vegetable and butter sauce, and the main course, grilled goose, which I had never tried before. A different chef brought the plates from the kitchen each time and explained the dishes, but the flavors and textures were impossible to imagine just by looking and hearing about them. The cooking methods and seasonings were elaborate, with a rich, deep flavor, yet not overly complex, and the natural flavors of the ingredients were fully utilized. It was simply delicious! It was such an inspiring experience that I'd want to return to Copenhagen just for "Amas," and it was the perfect way to end a wonderful day.
