In this week's Bread of the Week, the FASHION HEADLINE editorial team introduces the latest breads. Our 18th installment features Maison Kayser!

Original flour. Specially produced, high-quality butter. Maison Kayser uses carefully selected ingredients and traditional French methods with natural yeast to bake delicious, fresh bread every day. More than just selling bread, the shop values communication with customers. They suggest hard breads to complement dinner menus and learn delicious ways to eat baguettes from customers. Their motto is to create a "happy dining experience with bread" through communication through bread. Through bread-making, they propose a new lifestyle born from bread.

Croissant (200 yen)

Starting with a thin, pie-like crust, the flavor-packed interior is moist with an exquisite balance of moisture. The butter flavor is robust yet not overpowering. The rich sweetness and umami flavor spread with each bite. Every moment of eating is delicious. This is the number one recipe!
  Ekmek Lemon Tea (290 yen)
Ekmek Lemon Tea (290 yen)

Ekmek Lemon Tea is a blend of black tea, lemon, and white chocolate. Ekmek means bread in Turkish. This is Turkish bread. Maison Kayser is known for its hard breads, so I thought this bread would have a firm texture, but when I tried it, it was softer than I expected. However, rather than being fluffy, it had a firm, dense texture with a solid, heavy feel. As you can see, it uses a generous amount of black tea leaves and has a wonderful aroma. The fruity lemon adds to the refreshing aftertaste, making it delicious to add to your cravings! This is a highly recommended product in the store, so if you come across it, be sure to buy it.
  Pain aux Fromages (400 yen)
Pain aux Fromages (400 yen)
Pain aux Fromages is baked with Swiss Emmental cheese kneaded into the dough and topped with it. The golden brown cheese oozing out from the bottom is also delicious. At first glance, this bread might seem like a hard type, but the crust is crisp and the inside is softer than expected. Like the Ekmek mentioned earlier, it's relatively soft, yet packed with a firm texture. The cheese flavor has an exquisite balance of salty and sweet, making it neither a savory bread nor a sweet bread, but rather a unique Maison Kayser cheese bread, "Pain aux Fromages."

When you cut it in half, you'll notice that it doesn't contain any cheese pieces or melted cheese as a filling. It's amazing how much of a strong cheese flavor it still has. It would go well on its own, or as a side dish to brown stew.
