Ladurée has released its 2019 Christmas collection, featuring a lineup of Buche de Noël and macarons created by Canadian chef pastry chef Patrice Demel.
Buche Atoka (serves 4, ¥6,100)
Patrice Demel, the Canadian chef pastry chef behind this year's Christmas collection, is passionate about creating exquisite seasonal desserts. His minimalist style never relies on sugar as the main ingredient, resulting in creations that are generously crafted using the finest ingredients.
The new Buche de Noel "Atoka" was born when Patrice Demel was inspired by his childhood Christmas memories and wanted to create a Buche de Noel filled with plenty of fruit. Quebec's signature maple syrup complements the tartness of the cranberries, and the buckwheat biscuit is combined with a roasted buckwheat infusion to create a ganache montée with a subtle buckwheat aroma. These ingredients harmonize beautifully with the chocolate mousse.
The "Buche Atoka" (serves four, 6,100 yen) will be available from December 21st to 25th, and the "Buchette Atoka" (serves one, 1,360 yen) will be available from December 13th to 25th at all Ladurée stores except the Haneda store.
"Buchette Mademoiselle" (1 person, 1,360 yen)
Ladurée's classic Bouche de Noël is also available in five flavors. "Buchette Mademoiselle" (1 person, 1,360 yen), made with biscuit dough layered with crispy almond praline, red fruit compote, smooth almond cream, and vanilla and mascarpone mousse, will be sold exclusively at the pop-up boutique.
"Buche Favourite" (serves 4, 6,100 yen)
"Buche Favourite" (serves 4, 6,100 yen), made with pistachio macaron dough layered with roasted Iranian pistachio crème mousseline and thin praline feuilletine, will be on sale at all Ladurée stores except the Haneda store from December 21st to 25th, and "Buchette Favourite" (serves 1,360 yen) from December 13th to 25th.
