In this week's Bread of the Week, the FASHION HEADLINE editorial team introduces the breads they're currently enjoying. Our 15th installment features "Panshiro Tezukayama"!

Panshiro Tezukayama, with its main store and workshop in Tezukayama, Osaka, is run by two artisans with over 40 years of experience in bread making. Driven by a desire to "revive Japan's traditional food culture," the bakery offers natural yeast bread made with carefully selected, non-genetically modified domestic ingredients.
In pursuit of "umami" and "flavor" that can be enjoyed every day, their unique manufacturing process minimizes the use of fats and oils, such as butter and cream, resulting in a gentle, healthy taste. The wheat used is a rare blend grown only in a limited area of Hokkaido. Another feature is that it does not contain eggs, so even people with egg allergies can enjoy it.

Baked using far-infrared radiation from a stone oven, "PANSHIROU Honshokupan (Square)" has a dense, textured appearance, but is soft and fluffy all the way to the crust, resulting in a chewy texture. The moment you put it in your mouth, a soft sweetness spreads throughout your mouth.

To fully enjoy this sweetness, the recommended way to eat it is simply without any toppings. On the day of purchase, we recommend eating it as is, untouched, to enjoy the texture, and from the next day onwards, toasting it for a light, crispy bite.

The logo design, inspired by ties, is imbued with the meaning of valuing the connections between people. The shopper bag, which features a large logo, has a different design each year depending on the season. Currently, it features an illustration of rice ears, which is in keeping with the harvest season of autumn. As a brand that values Japanese food culture, the shopper design, which allows you to feel the changing of the seasons, is also noteworthy.
