Bon Bonheur, a collaboration between Sébastien Bouillet and a renowned French chef, opens at Ginza Mitsukoshi

A new French & dessert cafe, "BON BONHEUR," will open on the 4th floor of Ginza Mitsukoshi on December 19th. Chef Ayaya Tsuboka, head chef of the popular French restaurant "La Coupe d'Or" in Shirokane Takanawa, has teamed up with Sébastien Bouillet, a pastry chef and chocolatier from Lyon, France. Tsuboka studied under Chef Sébastien Chambreux, a Meilleur Ouvrier de France (MOF) recipient, at Le Moulin de Mougins in the south of France. He then received training from Osven Chartier of the natural restaurant "Saturne" in Paris's 2nd arrondissement, before returning to Japan and becoming chef at "La Coupe d'Or" in 2013. He serves light, delicate, and beautiful French cuisine that maximizes the natural aroma of the ingredients, captivating crowds every day.

Sébastien was certified as a member of Relais Desserts, an international association of the world's most renowned pastry chefs, in 2004 and is one of the most notable pastry chefs and chocolatiers of today. With stores currently open in both France and Japan, Sébastien creates fun chocolates brimming with his unique playful spirit, with a focus on flavor and texture.

Bon Bonheur, the new cafe resulting from this collaboration, is a luxurious space quintessentially Ginza, where you can enjoy surprising assiette desserts (plated desserts) and casual French lunch plates.

For a surprise assiette dessert that has become a signature menu item, we recommend starting with Sébastien Bouillet's special "Forêt Noire" (1,800 yen). This special dessert is a Forêt Noire (Black Forest) dessert made with cherries and chocolate, crafted in Sébastien's style. With a matcha tuile on the outside, it's a photogenic dish that's perfect for both taste and appearance.

"Île Flottant aux Fraises" (1,500 yen) is a dessert made of a white chocolate ball filled with raspberry sorbet. Garnished with crispy pink meringue and strawberries cut into the shape of roses, it's a dish so beautiful it's almost a shame to eat it.

There is also a wide selection of other dishes, including salads, pasta, and croissant sandwiches. The "French Special Assortment" (2,800 yen) is a French deli platter that can be enjoyed like a full French course meal, from hors d'oeuvres to the main course, and is a satisfying plate that makes generous use of seasonal seafood, meat, and vegetables. The set includes eight French deli dishes, soup, bread, and scrambled eggs with foie gras and truffles.
