"Isama," a Kyoto restaurant created by six professionals in spatial design, furniture, and cuisine, introduces new summer obanzai dishes

IZAMA, a Kyoto restaurant with a theme of tradition, inheritance, and renewal, offers Kyoto hospitality while overlooking an old storehouse and courtyard. Starting in August, a new menu item, the "Nine Kinds of Obanzai Gozen," featuring nine types of Kyoto-style obanzai dishes, was introduced.

IZAMA opened in March of last year. Six professionals participated in the project, including architect Yuko Nagayama for the space design, furniture maker Shinichiro Nakahara of Landscape Products for the furniture production, producer Sadahiro Nakamura, a driving force behind the cafe boom and known for numerous brand cafes as well as hot spots like "bills" and "Dojima Hotel," and culinary supervision by master Japanese chef Toshiro Kandagawa.

In line with the changing face of Kyoto's cityscape with the seasons, the space expresses Kyoto's unique hospitality and cuisine made with carefully selected locally sourced ingredients, based on the idea that food is medicine and food is one.

The newly introduced "Nine Kinds of Obanzai Gozen" features a vibrant array of obanzai dishes, presented on Japanese tableware and small bowls, including sauces made with tofu from Hiranoya, a long-established tofu shop founded in the Meiji era. Hiranoya's tofu, beloved by Kitaoji Rosanjin and Shirasu Jiro, is made without any preservatives and using Kyoto's underground water, and is characterized by its unique manufacturing method, which allows you to taste the sweetness of the soybeans. Other dishes available include obanzai made with Kyoto summer vegetables and fragrant dashi broth, and smooth soba somen noodles.
