Founded in 1900, Bunmeido's signature castella cakes have been baked by artisans one by one using traditional techniques passed down for over a century without the use of additives, maintaining the deliciousness and quality of the cakes. At Blue Bottle Coffee, we deeply resonate with not only the gentle flavor that evokes nostalgia and happiness, but also the commitment to ingredients and manufacturing, and the attitude of constantly taking on new challenges, which led to the start of this collaboration.
"Blue Bottle Coffee Castella" is an original castella based on the traditional castella made with eggs, sugar, corn syrup, and flour, and uses brown sugar, which is also used in many Blue Bottle Coffee pastries, to create a gentle sweetness that pairs perfectly with coffee. Enjoy the unparalleled richness from the generous amount of egg yolk, the smooth texture from the finely grained flour, and the texture of the large coarse sugars at the bottom. The moist dough and refined sweetness that only freshly made cakes can offer are a perfect match with coffee, making it a great pairing with coffee at home or as a gift for someone special.
