The members of the "Tochiotome Bread" development project are bread professionals "Bread Sommeliers" who have passed the "Bread Sommelier Certification Exam," a must-have qualification exam for bread lovers that has a total of 60,000 test takers, and Chef Tsuboyama of Penny Lane. The development of "Tochiotome Bread" was the second installment of the "Bread Development Project," in which "Bread Sommeliers" work with chefs from popular bakeries to develop new breads.
 
~Our goal was to make the most of the natural flavor of Tochiotome strawberries~
<> Strawberries are originally an ingredient that is said to be difficult to combine with bread dough. The dough, which contains a lot of water from strawberries, is very delicate, and the jam wrapped around it would leak out, creating large gaps between the dough and the jam, creating a challenge. We made dozens of prototypes just for the dough until everyone was satisfied.

It is extremely difficult to bring out the natural goodness of Tochiotome strawberries, which have an exquisite balance of sweet and sour flavor. Various attempts were made, such as the bread sommelier's idea of wrapping cream cheese around the jam to highlight the sweetness of the Tochiotome strawberries. However, every attempt ended up overpowering the delicate flavor of the Tochiotome strawberries. In the end, the bread sommelier and chef settled on creating a bread that would bring out the natural deliciousness of Tochiotome strawberries.
