The Living Pavilion by Aman at Aman Kyoto (Kita-ku, Kyoto) will be offering "The Art of Strawberry," a spring strawberry parfait that is like art and sprinkled with the essence of Kyoto, for a limited time from January 9, 2024.


The desserts created by Executive Pastry Chef Matsuo Hiroyuki have been popular every season for their originality and delicate beauty, reflecting the changing of the seasons. As spring approaches, the adorable two-colored strawberry parfait, "The Art of Strawberry," is now available. This parfait features a generous amount of sweet, slightly pink Awayuki strawberries and Amaou strawberries, which have an exquisite balance of sweetness and tartness, and is arranged with fresh strawberries as well as ice cream and chocolate. The glass is dotted with beautiful Kyoto elements that are carefully selected for their texture and flavor, highlighting the strawberries, the star attraction.


The parfait lid is decorated with matcha tuile leaves inspired by Aman Kyoto's forest garden, and is topped with two types of fresh strawberries and a smooth white chocolate cream that perfectly complements the tartness of the strawberries. It is topped with yuzu peel for an accent. Upon opening the lid of the mochi, a gorgeous sight reminiscent of a jewel box unfolds before your eyes, featuring homemade strawberry ice cream from Kamigamo, Kyoto, and milk gelato from Miyama, Kyoto, topped with light white and pink meringue. The Miyama milk panna cotta is topped with Kyoto amazake rice flour granola, custard, and fresh strawberries, and rosé champagne jelly at the bottom of the glass, creating a layered, sophisticated flavor that's also enjoyable to eat.


Inside the lid of Matsuo's specially crafted mochi, we've hidden a layer of feuillantine (flaked crepe) and strawberry chocolate, allowing you to enjoy the harmony of refreshing yet rich strawberries and the essence of Kyoto until the very last bite. The set also comes with an original organic coffee, black tea or herbal tea, and a strawberry pound cake as a souvenir.

Executive Pastry Chef Hiroyuki Matsuo
With nearly 40 years of experience at a luxury hotel in the Kansai region, he has developed numerous original sweets using his abundant sensibilities. As a confectioner, he also creates displays and has won awards such as the Osaka Governor's Award and Grand Prize in decoration and decorative confectionery contests. Since opening, his afternoon tea, featuring Japanese and adorable Western sweets that reflect the changing seasons, has been a hit, providing a feast for the eyes and a delight for the palate.
