Vegan sweets specialty store releases two types of Christmas cakes made with 100% plant-based ingredients

Hal Okada Vegan Sweets Lab, a takeout specialty store for vegan sweets made with 100% plant-based ingredients operated by Cafe Company Inc., will begin accepting reservations for two Christmas-only items from November 17, 2020.


These special Christmas items are created by Haruo Okada, a vegan pastry chef with many years of experience who creates sweets without using any animal products, such as eggs or milk. Christmas items are limited in quantity, so reservations will close once the planned number is reached. All reservations will be accepted online only.

A Christmas-only shortcake made with a generous amount of around 20 strawberries. It combines original soy milk whipped cream and gluten-free sponge, and is characterized by the light, rich flavor you can only get from plant-based ingredients. Enjoy decorating it like a wreath to add a fun touch to your table.

A special cake available in limited quantities only for Christmas. The stump-shaped cocoa biscuit is surrounded by a glossy chocolate ganache, rich pistachio cream, cocoa sponge, raspberry custard cream, chocolate ganache, and gluten-free sponge, creating a colorful layering of flavors that melts smoothly in your mouth despite being 100% plant-based.

16 years since developing vegan sweets.

It all started with a desire to give dreams to children who cannot eat Western-style sweets due to food allergies to eggs, milk, etc. As the times change, demand is increasing not only from people with allergies, but also from vegans and others who prefer sweets for health reasons, and I feel the demand for Western-style sweets made with 100% plant-based ingredients every day.

My goal is to "provide borderless food that everyone can enjoy together around the same table." Food that can be enjoyed safely by those who have a demand for plant-based ingredients, and delicious enough to satisfy even those who don't. That is what I envision as "borderless food." With a LAB as our base for this exploration, I would like to continue exploring the further possibilities of sweets, without resting on my laurels.

After gaining experience as a chef pastry chef at Chaya Macrobiotics and owner pastry chef at "halcafe 229," Japan's first vegan sweets specialty store in Kamakura, Okada joined Cafe Company Inc. as its exclusive executive pastry chef. On August 19, 2020, he opened "hal okada vegan sweets lab" in Hiroo, Tokyo. With an insatiable spirit of inquiry, he offers sweets that look to the future of food.
