Michel Creuzer is a prestigious chocolate house founded in 1948 in Damville, Normandy, France. It is a truly "Made in France" family-run business that has always focused on the principles of "quality," "taste," and "healthiness."

In 1989, they developed high-cocoa chocolate, and in 1999, they pioneered the production of "single-plantation chocolate." Committed to "making chocolate with a face-to-face relationship with the producers," they are chocolatiers and cocoa experts who handle every step in-house, from processing the cocoa beans into chocolate to adding fillings such as pralines, caramels, and liqueurs.

■Approved by the French government. Chocolates Available Only at Select Shops

Currently, in addition to eight directly managed stores in Paris and New York, their chocolates are available exclusively at sophisticated shops such as Paris's luxury department stores Galeries Lafayette and La Grande Epicerie au Bon Marché. These precious chocolates are not imported to Japan year-round and are only available during Valentine's Day. In 2012, their advanced chocolate-making skills and expertise were recognized, with the French government awarding them the EPV French Intangible Cultural Heritage Company Mark, a designation given only to companies recognized by the French government as possessing the highest level of technology.

■ Also famous as a couverture brand. Used by top chocolatiers and five-star hotels

Michel Cluizel is also famous as a brand of "couverture," a chocolate used in confectionery. The company has direct contracts with seven cacao plantations around the world, including the Dominican Republic and Mexico, and is committed to making "single plantation chocolate," which is rare in the world and uses only the same type of cacao from a single plantation. The couverture produced there is loved by top chocolatiers around the world and is renowned for its quality and deliciousness, being served in five-star hotels, prestigious restaurants, and even in the first class of France's flagship airline, Air France.

The ganache is made with sultana raisins soaked in the mellow flavor of Calvados and milk chocolate, then coated in caramel-flavored 39% cocoa milk chocolate.
