This autumn, The Living Pavilion by Aman at Aman Kyoto will be offering a limited-time offer from October 1, 2023, featuring "The Art of Tamba Chestnuts," an autumn Mont Blanc parfait that is like a work of art and sprinkled with the essence of Japanese culture, made with luxurious Kyoto Tamba chestnuts and sprinkled with the essence of Japanese culture.


The desserts created by Executive Pastry Chef Hiroyuki Matsuo reflect the changing seasons and have been popular every season for their originality and delicate beauty. In this season of slightly cooler weather, a Mont Blanc parfait resembling a forest garden, "The Art of Tamba Chestnuts," will be newly introduced. Tamba chestnuts are used generously and are arranged in a variety of ways, including ice cream, paste, and brûlée, scattered throughout the glass.


The lid of this beautiful parfait, stylishly decorated with langue de chat cookies, is topped with a freshly squeezed Mont Blanc made with a rich and smooth Tamba chestnut paste. Opening the lid of the mochi cake reveals a tube filled with two carefully selected homemade ice creams, Tamba chestnut and Wasanbon, gently enveloped in an espuma made from Japanese black tea and midori. Tamba black beans, Tamba chestnuts, and matcha sponge cake shaped like moss are scattered on top of the Tamba chestnut brûlée, creating a layered flavor and texture. The refreshingly tart Mizuo yuzu jelly at the bottom of the glass is paired with the elegant sweetness of the Tamba chestnuts, creating an exquisite contrast.


The visually appealing stick-shaped meringue is made using bamboo charcoal, and Matsuo's special mochi lid also features rice puffs and white chocolate hidden inside, ensuring you can enjoy it until the very last bite. Your reservation includes Aman Kyoto's original organic coffee, black tea, or herbal tea, as well as a souvenir Tamba chestnut pound cake.

With his nearly 40 years of experience and rich sensibilities, Hiroyuki Matsuo has developed a variety of original sweets at luxury hotels in the Kansai region. As a confectioner, she also creates displays and has won awards including the Osaka Governor's Award and Grand Prize in decoration and decorative confectionery contests. Her afternoon tea, featuring Japanese and adorable Western sweets that reflect the changing seasons, has been a hit since the resort opened, providing a visual and culinary delight.
