Mont St. Clair, a patisserie run by pastry chef Tsujiguchi Hironobu, will begin selling petit gateaux made with plant-based ingredients from June 5, 2023. Plant-based cakes have been gaining attention in recent years due to growing health consciousness and environmental awareness. Mont St. Clair will also be offering its first plant-based cakes, made with plant-based butter, whipped cream, vegan chocolate, and more.

Plant-based chocolate cake. The base is made of a light biscuit dough made with plant-based butter, creamy ingredients and a plant-based egg mix, and crunchy Christians. Each part, including the mousse, biscuit, Christians and glace, is made using vegan milk chocolate. Layers of chocolate with different textures, accented with coffee and hazelnut, are layered on top of each other, and the centre is filled with tropical fruit cream, such as banana and passion fruit, which go well with coconut. With a light texture and a refreshing aftertaste, we have created a satisfying gateau that makes the most of the benefits that can only be achieved through plant-based ingredients. A plant-based petit gateau unique to Mont Saint Clair.

Concept
Opened in Jiyugaoka in 1998. This patisserie is the origin of Tsujiguchi Hironobu and established the Tsujiguchi style. The store offers a wide variety of items, including cakes, baked goods, semi-fresh sweets, bread, and chocolate. Using seasonal fruits and ingredients from around the world, the store expresses its desserts in the same way a painter decorates a canvas with various colors. Made with carefully selected ingredients and a unique method, the store offers an array of enticing sweets with exquisite taste, visual appeal, aroma, and texture.
