Mr. CHEESECAKE Reveals His Recipes! Try Making Them at Home with the Stay-Home Cooking Challenge

Mr. CHEESECAKE, the acclaimed creator of the "best cheesecake of your life," has released an original recipe adapted for home use! He also introduces an easy version that requires only olive oil, lemon, and salt, so take this opportunity to give it a try!

HOW TO MAKE
"Mr. CHEESECAKE"

■Ingredients (for one 22cm pound cake pan)



・Cream cheese (200g)
・Sugar (100g)
・Sour cream (180g)
・Greek yogurt (50g)
・Heavy cream (100g)
・Eggs (2)
・Cornstarch (20g)
・Lemon juice (9g)
・White chocolate (50g)
・Tonka beans (1/2)
・Vanilla beans (1/4)

【Preparation】
・Line the mold with parchment paper to make it easier to remove from the mold.
・Allow the cream cheese and eggs to come to room temperature. Beat the eggs.
・Chop the white chocolate roughly.
・Finely grate the tonka beans using a grater or a box grater.
・Slit the vanilla beans lengthwise with a knife and scrape out the seeds.
・Preheat the oven to 180°C.

■Directions



① Place the cream cheese and sugar in a bowl, place over a double boiler, and whisk until smooth. Heat the cream cheese in the double boiler to raise the temperature of the batter.

【Tip】Putting the batter in the oven while it's still hot will shorten the baking time and result in a melt-in-your-mouth texture.


② In a separate bowl, add the sour cream and Greek yogurt and mix well with a rubber spatula.

③ Add the eggs to recipe ② in three batches, whisking well each time. Add the lemon juice and cornstarch and mix further.

④ Put the cream into a small saucepan, add the white chocolate, tonka beans, and vanilla bean seeds and pods, and heat over medium heat. Once boiling, turn off the heat.

【Point】 Boil the tonka beans and vanilla to bring out their aroma.

⑤ Add recipe ④ to recipe ① and mix with a whisk. Add ③ and mix until smooth, then strain into a mold.

⑥ Place the mold on a baking tray and pour in boiling water until it is about 2-3cm high.

[Tip] Baking in a water bath will give it a soft texture, like half-cooked bread. If your baking tray is shallow, fill a tray or similar that is larger than the mold with hot water and place it on the baking tray.

⑦ Place in the oven and bake at 180°C for 25 minutes, then reduce the temperature to 150°C and bake for 20 minutes. Once removed, let cool slightly, remove from the mold and chill in the refrigerator for at least 4 hours until complete!
