Look for "Rituel Bleu"! Danish pastries and fresh bread made using traditional French techniques [This Week's Bread: Vol. 17]

Nov 14, 2019
In this week's Bread of the Week, the FASHION HEADLINE editorial team introduces the breads they're currently catching our eye. Our 17th installment features RITUEL! RITUEL was founded in 2015 as a viennoiserie (sweet bread made with eggs, milk, sugar, and other ingredients). RITUEL offers a wide variety of breads made with carefully selected ingredients, including carefully selected wheat, free-range eggs from Kurofuji Farm in Yamanashi, milk from Hokkaido, and seasonal fruit. Using traditional French baking techniques, they meticulously craft their breads.

Escargot Chocolate Pistage

Escargot Chocolat Pistage (¥391) The shop's signature item is the spiral Danish pastry, "Escargot." It's a satisfyingly large, crispy crust that's soft and moist toward the center. The ever-popular Chocolat Pistage features a rich, fermented butter-infused Danish pastry filled with rich pistachio cream and high-cocoa dark chocolate. The gorgeous aroma of pistachios and the bittersweet taste of cocoa are a perfect match!

The cute illustrated paper wrapper that wraps the bread is also a highlight.

Choissons aux Cremes

Chausson aux Crèmes (303 yen)

The shop's top recommendation, "Chausson aux Crèmes," is a custard cream encased in a puff pastry baked with French butter. Originally released as a limited-edition item in collaboration with Isetan Mitsukoshi, it proved so popular that it became a standard item. When you bite into the crispy puff pastry, the rich, egg-flavored custard cream spills out. The slightly bitter caramelized icing on top adds a touch of richness, making it perfect for the chilly weather.

RITUEL Fresh Bread (421 yen)

Our most popular item is the "RITUEL Fresh Bread." Baked using Hokkaido wheat and the fragrant French A.O.C. butter "Pampouli," packed with concentrated milk flavor, it offers a luxurious taste with a rich wheat aroma and a milky buttery flavor. To fully enjoy the incredibly chewy texture and mellow aroma, be sure to try the first slice fresh! RITUEL's signature blue "Gift Box" (550 yen) is also available, making it a great gift idea.

A chewy, chewy texture.
Lightly toast it for a crispier texture.
