The menu only has one type of bread! Ginza Nishikawa's bread made with specially selected water [This week's bread: Vol. 13]

Event Date:2019.10.09-10.15

The FASHION HEADLINE editorial team introduces the latest breads in this week's Bread of the Week. Our 13th installment features Ginza Nishikawa!

Ginza Nishikawa

The words "shokupan" (white bread) are written in large letters on a white noren curtain. Once you step through the striking noren and enter the store, you'll find only one type of shokupan. Ginza Nishikawa is a popular, high-end bread specialty store that draws many visitors every day for this loaf of bread. Based on the idea that "water is an ingredient," they developed a unique alkaline ionized water, which is said to bring out the flavor of the ingredients, to perfectly complement their shokupan. Their slightly sweet, moist, and smooth shokupan is a hot topic.

Bread (864 yen)

First, we recommend trying it uncooked and without any toppings, as recommended by the shop. The moment you tear it apart, you'll be surprised by its soft, moist texture, which is hard to believe is a slice of bread. As you put it in your mouth, the fluffy texture is like a steamed bun, and a soft, gentle sweetness spreads throughout your mouth.

The light texture makes it easy to eat, and by the time you've finished it, you'll be wanting more! But don't eat it all in one go; savor it over time. One of its distinctive features is that its flavor changes over time. On the first day, you'll enjoy the fragrant aroma and texture of freshly baked bread, and on the second day, you'll notice an increase in moistness and sweetness. On the third day, when the flavors have blended, you can toast it and enjoy a crispy outside and chewy inside texture.

The luxurious shopping bag, reminiscent of the gifts you'd find at a traditional Japanese restaurant, makes the perfect gift. Another key point is the attention to detail, such as the use of a storage bag that prevents steam from building up. You can enjoy the bread in the best condition from the time you buy it until you finish eating it.
