For a limited time this spring, Aman Tokyo (Otemachi, Tokyo) will be offering seasonal afternoon tea at The Lounge by Aman on the 33rd floor and The Café by Aman in the annex on the first floor. 

 
■The Lounge by Aman "Herb Garden Afternoon Tea"
Using seasonal ingredients, this afternoon tea is served with a different theme each season. This spring, based on the concept of a "herb garden," all menu items feature healthy herbs, created to complement the black tea. First, an amuse-bouche of blueberry soup topped with a soft lavender aroma and white wine espuma will be served. Enjoy this juicy and rich yet refreshing treat.
 
 
 
Decorating the top tier of the special black bamboo stand is a mint and chocolate Saint Honoré cake inspired by a three-leaf clover. The choux pastry filled with refreshing mint-flavored custard is combined with chocolate cream and garnished with chocolate shaped like a ladybug. The ladybug, which is said to bring good fortune, seems to be celebrating the arrival of the new green season. Served alongside rosemary and chocolate financiers and fresh blueberries.
 
On the middle tier, delicate sweets incorporating unique herbs add color to the tray. Enjoy sweet treats crafted with a focus on the natural fragrance of each herb and its compatibility with the ingredients, such as a tart combining basil and lime cream with melt-in-your-mouth mango, dill and green apple mousse, Victoria cake with rose-scented buttercream and raspberry jam sandwiched between sponge cake, and chamomile and lemongrass jelly.
 
The bottom tier is lined with savory dishes that add a touch of herb charm. Enjoy carefully handcrafted items that bring out the unique characteristics of each herb, such as a cheese tart with a striking Japanese flavor featuring mugwort and pecorino cheese, a thin tofu bavarois with Japanese pepper and sweet shrimp marinated in wasabi, and a truffle-accented celvatico and asiago cream sandwich.
 
 
The original Aman Tokyo trunk contains egg- and dairy-free vegan cookies made with four different herbs. Choose your favorite two from four flavored cookies, each matched to the aroma and flavor of its herb: marjoram x oatmeal, rosemary x cocoa, thyme x almond, and fennel x matcha, to complete your own personalized afternoon tea.
In addition to the original plain scone, we also offer lemon and basil scones, which can be paired with strawberry and apricot jam and clotted cream.
