Atelier Ukai, a Western confectionery shop run by Ukai Co., Ltd., which operates restaurants mainly in Tokyo and Kanagawa, will be participating in the 22nd annual JR Nagoya Takashimaya Chocolate Event from January 20th to February 14th, 2022. Some products will also be available for purchase at JR Nagoya Takashimaya's online shop. 
 

Atelier Ukai's Chocolat Series offers a profound chocolate marriage born from the encounter between cookies and cacao. The cookies, carefully crafted with the finest ingredients, are enveloped in a uniquely blended chocolate bursting with cacao flavor. By combining fruit-rich pâté de fruits and powder with fragrant gianduja, we have created a chocolate confectionery that is both new and evocative of nostalgic memories.
 
JR Nagoya Takashimaya's chocolate festival "2022 Amour du Chocolat" will be selling new limited-edition products, such as "Four Sec Chocolat Specialité" and "Chocolat Selection (4 pieces)." "Four Sec Chocolat Specialité" is a cookie that makes the most of the rich flavor of butter, enhanced by the addition of cocoa. The "Chocolate Selection (4 pieces)" uses mandarin oranges from Nanno Town, Kaizu City, Gifu Prefecture, the hometown of chef patissier Suzuki Shigeo. It is made with the hope that it will contribute in some way to preserving the disappearing Satoyama scenery and mandarin orange farming in his hometown. My hometown of Nanno Town, Kaizu City, Gifu Prefecture, is the only mandarin orange producing area in Gifu Prefecture. When I was little, I would help with "mikan chigiri" (mandarin orange harvesting) with my neighbors during harvest season, and in the summer I would drink juice squeezed from thinned mandarins. The memorable charm of the unique "Nanno mandarin orange" has been captured together with special cacao.

Cacao Fino de Aroma: Cacao beans characterized by a rich, lingering finish with a diverse aroma
Cacao Fino de Aroma is one of the names given by the International Cocoa Organization (ICCO) to describe a variety of superior cacao beans. Also known as flavor beans, these beans are characterized by mellow aromas of fruit, spice, nuts, and flowers.
 
 
Single-origin chocolate made with cocoa mass and cocoa butter from Colombian cocoa beans
We use single-origin chocolate from Colombia, and we are committed to using 100% Colombian cocoa butter in our manufacturing process. By carrying out the entire process from chocolate production to processing in the country of origin of the cocoa beans, you can clearly experience the distinctive aroma and flavor.
 
We also make our own secondary ingredients such as jam and gianduja
Gianduja is a fragrant paste made from nuts and chocolate. Just adding it to jam deepens the flavor and makes it look gorgeous. We carefully make our own jam in small batches to suit the characteristics, consistency, texture and sweets of the ingredients used, and strive to deliver it to you as fresh as possible.

Shigeo Suzuki (Chief Pastry Manager, Atelier Ukai) Born in 1974. After training in France, he worked at a confectionery shop in Tokyo and as a teacher at Ecole Tsuji Tokyo before joining Ukai Co., Ltd. in 2003. He has served as a pastry chef at Ukai-tei, a teppanyaki restaurant in Yokohama, Ginza, and other locations, before being appointed head of confectionery in the Western Food Division in 2006.
