Executive Pastry Chef Matsuo Hiroyuki


He started his career as a confectioner in 1984. In 2011, he was appointed executive pastry chef at a luxury hotel in the Kansai region, where he oversees dessert buffets, shops, weddings, banquets, afternoon teas, and more. In addition to creating creative sweets, he has successfully completed numerous projects, including training for new overseas hotel openings and collaborating with renowned luxury brands. As a confectioner, he specializes in creating displays and has won numerous awards in decoration and confectionery contests. Since the hotel's opening in 2019, he has served as executive pastry chef at Aman Kyoto, developing all of the hotel's pastries, including those for The Living Pavilion by Aman and takeout. He is in charge of the sweets for afternoon tea. With his solid technical skills and overflowing creativity cultivated over more than 30 years of experience, he continues to offer innovative sweets that are both visually appealing and delicious, unique to Aman Kyoto.
