The Ritz-Carlton Kyoto (located on the banks of the Kamogawa Nijo Bridge in Nakagyo Ward, Kyoto City) will be offering a menu featuring autumn ingredients, including conger eel and matsutake mushrooms, at Tempura Mizuki, a restaurant that has been awarded one Michelin star for four consecutive years, starting September 15th.


Conger eel, one of Kyoto's signature ingredients, is said to be in season from summer to autumn. Fatty conger eel in autumn is also known as "nagori-hamo" (conger eel with a lingering lingering taste) and is especially rare. Tempura Mizuki will be offering an autumn-only course menu featuring conger eel, a seasonal delicacy, paired with matsutake mushrooms, the king of autumn delicacies.

The tempura is deep-fried to bring out the distinctive texture of the conger eel and the rich aroma of the matsutake mushroom. Using first-pressed safflower oil, the tempura is light and refreshing, yet still allows the deliciousness of the ingredients to shine through. Each dish is freshly fried at the counter, allowing you to watch the chefs at work right before your eyes. Enjoy not only the sight and taste, but also the sound and aroma of the tempura being fried, feasting on all five senses. Enjoy it with Kyoto's autumn flavors, including figs from Joyo City, Kyoto Prefecture; Tamba chestnuts, known for their fluffy texture; and "Kyokanzashi," a Kyoto vegetable made from early-harvested red kidney carrots.

In addition to tempura, Mizuki also offers kaiseki, sushi, and teppanyaki cuisine. During this period, each chef will be offering a menu featuring conger eel and matsutake mushrooms, recommended by their respective chefs.
