Made with plenty of fresh egg yolks, milk, and carefully selected flour, this is mixed with a foamy meringue made from egg whites and baked slowly to create a ”fluffy” The "chua" creates a texture similar to a soufflé cake, and the moist castella dough, combined with the flavors of eggs and milk, fills your mouth with a delightful taste.
Despite being so big that it fills both hands, this mysterious castella has a texture that almost melts in your mouth, making it so delicious you'll never tire of eating it. Adopting Taiwanese manufacturing methods to recreate the local taste and texture
To coincide with the opening of our Ginza store, specialized staff who trained in Taiwan came to Japan and adapted Taiwanese manufacturing methods to recreate the local taste and texture. Japanese ingredients are used, resulting in a finished product that can be described as high-quality Taiwanese castella. With travel to Taiwan not possible due to the COVID-19 pandemic, we hope you will enjoy the authentic texture.

Our unique baking method preserves the flavor of the matcha, allowing you to enjoy the original taste of the ingredients. The traditional Japanese matcha flavor is realized using Taiwanese castella cake techniques, resulting in a texture that melts in your mouth.
 
*In the future, we plan to offer variations such as "Coffee & Walnut Flavor" and "Banana Milk Flavor", as well as seasonal limited menus.
