Sébastien Bouillet, a pastry chef active in Lyon, France and Japan, will begin selling Galette des Rois from the first day his stores open in January 2021. Reservations will also be accepted at each store from December 18th to December 29th. 

Galette des Rois means "King's Round Bake."
Especially on Epiphany, January 6th, French patisseries and boulangeries are decked out in Galette des Rois. Inside each Galette des Rois is a ceramic charm called a fève. Whoever finds this fève in their slice will be crowned king (or queen) and blessed for the day.
*Sébastien Bouillet's Galette des Rois is filled with almonds instead of fèves, and is served with the fèves served separately.

The Galette des Rois may be simple, but it is a dessert that tests the skill of a pastry chef. At Sébastien Bouillet, we offer a traditional Galette des Rois.
 
The almond dough and the equally strong feuilletage are baked in a high-temperature oven to achieve the lightness of the feuilletage and the moist texture of the almond dough inside. Immediately after baking, the top of the galette des rois is brushed with syrup while it's still hot, resulting in a beautiful gloss and a crunchy texture that falls apart.

"Fève" means broad bean in French. Originally, dried beans were used, but now ceramic charms are used.
 
This year's theme is "les contes = fairy tales." Each order includes one of eight fun fèves, including dolls, glass slippers, and crowns from fairy tales.

*The fève and paper crown will be included separately.
