Our Strawberry Shortcake is a hit every year. This year, we've once again wrapped freshly picked, bright red, ripe strawberries from Shibuya Farm in Yawata, Kyoto, in a generous amount of fresh cream made primarily from Jersey cream, a unique blend created by our pastry chef. It's a simple shortcake made only with strawberries, sponge cake, and fresh cream, which allows our chef's skill to shine through in this luxurious flavor.

After graduating from a culinary school in Tokyo, he worked at a pastry shop and hotel in the city before moving to Europe in his mid-twenties and training in France, Belgium, and Luxembourg for around four years. After returning to Japan, he worked as an instructor at Le Cordon Bleu for a year before joining Hyatt as pastry chef at Grand Hyatt Fukuoka. He then worked as pastry chef at Grand Hyatt Shanghai, Park Hyatt Beijing, and Grand Hyatt Shenzhen. He also has experience in establishing the overall pastry concept, foundation, and style for new hotels when they open.
 
After spending around 10 years in China, he returned to Japan and served as Executive Pastry Chef at Park Hyatt Tokyo before being appointed Executive Pastry Chef at Hyatt Regency Kyoto in March 2020. Originally from Tokyo.

Galette des Rois is a traditional New Year's cake that is customarily eaten in France on the day of the Christian holiday of Epiphany. Made with a generous amount of cultured butter and almond cream, this galette is crispy on the outside and moist and fragrant on the inside.
 
There is an ancient legend that if, when cutting into a Galette des Rois, you find a small ceramic piece called a fève, it will bring you good fortune for the year. This year, we have followed the original tradition and have prepared adorable French-made fèves and crowns. Enjoy our playful French spirit.

Utilizing the experience he gained as a chef in the bread departments of foreign five-star hotels such as Joël Robuchon and Maison Kayser, he is in charge of making all the bread served in the hotel. He works with ingredients every day, pursuing the perfect flavor for each location, whether it be a restaurant or pastry boutique, while devoting himself to making bread carefully and sincerely.
