Hotel koe Tokyo, operated by Stripe International Inc.'s koe brand, will open hotel koe bakery in the koe lobby on the first floor.

The bakery that has been popular at koe lobby has been updated. It will open under the new name hotel koe bakery, focusing on sliced bread. With the supervision of Pan Labo's Hiroaki Ikeda, who has eaten every ounce of bread in Japan, the bakery was created with the desire to "enrich and enjoy Japanese dining, creating sliced bread for the new everyday." Hotel Koe Bakery offers a lineup of five types of bread. Among them is the "Financier Bread - An Evolution of Fresh Bread," inspired by the baked confectionery "financier," a product of Mr. Ikeda and his team's dedication. Its rich yet airy texture melts in your mouth, with a crispy crust for a new texture. With a gorgeous aroma reminiscent of baked goods, it's a must-try for your 3 o'clock snack. It comes in a special gift box. Other new breads include "Hotel Bread - A Wonderful Morning," "Chocolat Bread - Covered in Chocolate," "Brioche Bread - A Luxurious Indulgence of Milk and Eggs," and "Whole Wheat Bread - A Breeze from the Wheat Fields." In addition to bread, the store also offers a "Luxury Series" of savory and sweet breads made with carefully selected ingredients.

In addition, menus using bread from "hotel koe bakery" will be available at koe lobby at certain times. For breakfast, the bread buffet has been updated so that you can fully enjoy bread from "hotel koe bakery." For lunch, the previously very popular carbonara sandwich has been revived and is now even more delicious using bread from "hotel koe bakery." For tea time, a new type of chiboust has been introduced, made with small cubes of financier bread. It is a dessert with a texture similar to that of brûlée.

Take this opportunity to enjoy the slightly luxurious "hotel koe bakery" that can be enjoyed both in the shop and at home.

■Comment from Ikeda
If I can find incredibly delicious bread in the morning, I can put up with most things I don't like. If I bite into a truly delicious snack bread at 3pm, all my stress will melt away. I'm sure this isn't just a feeling I have as a bread lover. Bread lifts everyone's spirits and puts a smile on their face. These are dark times, but we want to make everyone happy with bread. This desire shared the same vision as hotel koe bakery, so we helped them develop a loaf of bread. We hope you will patronize us.
