Yokohama Bay Sheraton Hotel & Towers will be selling a new bread, "Kyoto's Ultimate Matcha Premium Danish Bread," made with high-quality matcha from Horii Shichimeien, a renowned Kyoto Uji tea shop founded in 1879, at its pastry shop "Dole" for a limited time from April 26, 2021. 
This is the first collaboration between the two companies. Horii Shichimeien has been producing high-quality Uji tea in Kyoto for over 140 years since its founding in 1879, and is a renowned shop that maintains consistent quality control from tea cultivation to manufacturing and sales. Chef baker Ryuji Morihiro, who is particularly passionate about making bread that brings out the natural flavor of the ingredients, has focused on Horii Shichimeien's Uji matcha for this new bread.
 
This matcha is made from first-picked "tencha" tea grown in Kyoto Prefecture, carefully selected by the owner and painstakingly ground to a fine consistency using a stone mill. To make the most of the vibrantly colored, fragrant, and mellow flavor of the matcha, the Danish pastries are baked by hand, each one carefully kneading high-quality domestic butter into the dough and folding it into 36 layers. This process creates a beautifully woven inner layer, resulting in a chewy texture and a light, fluffy, and crisp texture that is truly premium.
 
In addition, "Tamba black beans" from Kyoto are used, an ingredient that pairs perfectly with matcha. By using large black beans, the moderate bitterness of the Danish bread is accented by the rich, fragrant flavor and elegant fullness of the black beans, providing a delicious treat that you will never tire of.
