Aman Tokyo Original Christmas Cake "Forêt Noir"


"Forêt Noir" means "Black Forest" in French. This Christmas, we're bringing you a classic European cake inspired by the Black Forest (Schwarzwald), a forest in southwestern Germany. Soft cocoa dough infused with the cherry liqueur kirsch is enveloped in light fresh cream and topped with shaved bitter chocolate containing over 70% cocoa, creating a chic, sophisticated Christmas cake for adults.


Miyagawa was particularly particular about the dark cherries used in the cake. While many imported cherries have a strong sour taste, he chose those from Nagano Prefecture, which have a perfect balance of sweetness and tartness, to perfectly match the bitter chocolate. "Forêt Noire" is a sophisticated cake for adults, characterized by its understated chicness, characteristic of Aman, featuring rich dark chocolate, gently tart dark cherries, and the sweet aroma of kirsch. The gold leaf accents, inspired by the warm Christmas light of Otemachi Forest, evoke a special, sparkling moment.

Aman Tokyo Original Christmas Cake "Mont Blanc"


For those who don't like cakes containing alcohol, we also offer a Mont Blanc cake made with plenty of Japanese chestnuts from Kumamoto, renowned for being the highest quality in Japan. This Mont Blanc cake features large, almost pure Japanese chestnuts with a natural chestnut aroma and a deep, subtle sweetness reminiscent of Japanese sweets, and a crisp, melt-in-your-mouth coconut meringue layered with smooth custard made with Madagascar vanilla and whipped cream, all coated in Japanese chestnut paste. The Christmas tree shape created from evenly squeezed paste showcases the skill of our pastry chefs. Two types of Aman Tokyo Original "Stollen"


Aman Tokyo's original Stollen recipe features nuts such as almonds, hazelnuts, and walnuts, as well as dried fruits such as liqueur-soaked oranges, raisins, figs, and prunes, and a variety of spices like cinnamon and nutmeg. The fruit is cut into smaller pieces to ensure a moister bake. It's finished with a generous coating of refined wasanbon sugar, which melts in your mouth better than regular stollen and has a gentle sweetness. The Brown Sugar Chocolate Stollen uses the same dough as the plain version, but with finely chopped chocolate kneaded into it. The rich brown sugar coating enhances the sweetness of the chocolate and the tartness of the dried fruit. Why not give this traditional European baked good, thinly sliced and eaten in small portions in the run-up to Christmas, as a way to express gratitude for the year ahead? Additionally, the limited-time festive box for KOBAKO, a pastry item that has been well-received since its renewal last year, will be available again this year. This year, a gingerbread man-shaped pâté de fruits has been added to this limited-time item. Aman Tokyo Executive Pastry Chef Miyagawa Yoshihisa

After training in France, he worked in the pastry departments of Tokyo confectioneries and luxury hotels. Since its opening in 2014, he has served as pastry chef at Aman Tokyo, overseeing all pastries in the hotel, including desserts at the hotel's three dining establishments and chocolate and sweet gift items. He also oversaw the pastry department at the launch of Aman Yangyun in Shanghai and conducted master classes for Aman's pastry chefs at Amanpuri.
