From October 1 to November 30, 2020, cafe and bar Rhythmos, located on the 26th floor of The Strings Hotel Tokyo InterContinental, will be offering two autumn flavors of Strings Parfait. Executive Pastry Chef Suzuki Takashi has selected the flavors "chestnut" and "grape," which are at their peak of deliciousness at this time of year, to create a parfait that is like a beautiful work of art. The parfait has been perfected down to the smallest detail, from the melt-in-your-mouth texture and flavor to the mouthfeel, and is paired with carefully selected ingredients that bring out the full flavor of each, allowing you to fully enjoy the flavors of autumn. For those who want to compare the flavors, we will also continue to sell the "Duo Parfait" set, which comes with a choice of drink and is perfect for the appetite-stimulating autumn season. This exquisite lineup can be enjoyed not only during afternoon tea time, but also as a "final parfait" after dinner on long autumn nights.


“Marron Caramel”
"Marron Caramel," with its gently curved chestnut cream and delicate meringue sticks, is an impressive combination of rich yet gently sweet chestnuts and the perfectly compatible caramel. The combination includes chestnut cream, chestnut mousse accented with chopped chestnuts, and fluffy chestnuts simmered in their skins, all combined with salted caramel ice cream and caramel panna cotta. The amount of caramel has been carefully calculated so that you can fully enjoy the chestnut aroma and sweetness, and a subtle bitterness adds depth to the flavor. Additionally, by combining the lightly acidic blackcurrant sorbet and jelly with the fragrant roasted green tea jelly, the multiple ingredients overlap as you eat, further enhancing the chestnut flavor. Enjoy this parfait with its autumn color gradation, perfect for the harvest season of autumn.


“Grapes”
The combination of Shine Muscat grapes, with their captivating popping texture and noble fragrance, and Kyoho grapes, known as the "king of grapes," is a treat unique to autumn. This dish skillfully layers red and white grapes, including lustrous and fresh Kyoho and Shine Muscat grapes, as well as jelly, sorbet, compote, and panna cotta. Paired with a seasonal pomegranate jelly, the exquisite purple color perfectly balances the depth and translucency of autumn, creating a captivating glow. The subtle astringency and clean sweetness add depth to the fragrant and refreshing flavors of the two grapes. This elegant dish brings out the rich flavor of autumn grapes.

Executive Pastry Chef Suzuki Takashi
As executive pastry chef, Suzuki draws on his many years of experience at hotels and his high level of skill to create sweets such as the popular afternoon tea, strings parfaits, and buffets. He is also involved in the creation and supervision of desserts served at events and wedding receptions held in banquet halls, as well as wedding cakes.

Starting with winning the Chairman's Award in the Small Crafts category at the Kanagawa Prefecture Western Confectionery Competition in 2006, he has since won numerous awards, including the Chairman's Award in the Small Crafts category at the Japan Cake Show (2009), the Grand Prize in the Fresh Confections category at the Kiri Cream Cheese Contest (2011), and the Excellence Award at the American Dried Egg Sweets Bakery Chef Contest (2015). He has also won the Governor's Award three times at the Kanagawa Prefecture Western Confectionery Competition. He has continued to develop numerous desserts with meticulous attention to detail, and in 2013 won the Nikkei Restaurant Menu Grand Prix. Previously, he worked on various dessert projects in the pastry department of Hilton Tokyo, a mecca for sweets buffets. In April 2018, he was appointed Executive Pastry Chef at The Strings Hotel Tokyo InterContinental. Born in Yokohama, Kanagawa Prefecture in 1978.
