Flux Cafe is based on the concept of "making energy-rich meals that are low-impact on the body a part of your daily life," and offers meals centered around "delicious, low-gluten obanzai" and "protein-rich athlete's meals." The restaurant is produced by Yukiko Niimura, the third-generation young proprietress of the long-established Kagoshima traditional Japanese restaurant "Yamaei," and also the representative director of food retailer Yamaei Japan Co., Ltd. "Excessive gluten intake worsens the intestinal environment and causes various health problems. So I came up with the concept from the idea of making everyday meals low in gluten," says Niimura. Based on the flavors of the long-established traditional Japanese restaurant, the restaurant is also committed to pursuing deliciousness.

■ Eat hearty meals without feeling guilty
Even though it's low-gluten, the most important thing is that it's delicious and can be continued without difficulty. That's why we've lined up menus based on Japanese cuisine that any Japanese person would find comforting. We want you to enjoy delicious, hearty meals even if you're on a health or diet diet, so we've created a variety of recipes that are mindful of saving calories even when you eat a lot, such as mixing konjac into white rice, making konjac noodles in a peperoncino style, and creating a okara salad that's similar to potato salad. Even the mayonnaise is homemade, made without eggs using soy milk, extra virgin soybean oil rich in omega-3, vinegar, and natural salt. This is another example of our commitment to using seasonings that are both delicious and healthy.

The main items on the menu are the Obanzai Set (1,500 yen, 1,200 yen at lunchtime, takeout available), which combines your choice of three obanzai dishes, pork miso soup, rice (white or brown rice), pickled vegetables, and a drink, and the Protein Plate Set (1,200-1,500 yen), which combines steamed meat and shrimp, steamed vegetables, a white omelette made with egg whites, quinoa salad, and miso soup. One of the restaurant's features is that it has a menu that caters to athletes who are concerned about their physical fitness. Gluten-free sweets, including rice flour dorayaki and roll cakes, are also popular. This summer, new menu items will be available, including hiyashi chuka (chilled Chinese noodles) made with completely gluten-free noodles and shaved ice without white sugar (mango tankan + coconut milk condensed milk, green tea azuki bean + soy milk condensed milk).
