Mr. CHEESECAKE chef's recipe for "Kiwi and Herb Marinade" and three variations

Chef Tamura Koji, of "Mr. CHEESECAKE," renowned for making "the best cheesecake of your life," has released a simple, effortless recipe for "Kiwi and Herb Marinade," made with kiwi and herbs to make before bed. This is a recommended menu for breakfast or a snack. Be sure to check it out along with three recipe variations.

HOW TO MAKE
"Marinated kiwi and herbs"

■Ingredients

《Syrup》
・Water: 500g
・Honey: 75g
・Lemon juice: 20g

《Ingredients other than syrup》
・Kiwi: about 3
・Lemon zest: a little
・Herbs of your choice: 10g
(Lemongrass, shiso, dill, rosemary, etc.)
■Directions

*The photo shows a combination of kiwi, shiso leaves, and dill.
① Mix the ingredients for the syrup in a pot and bring to a boil.

② Once boiling, turn off the heat, add the lemon peel and herbs, and the syrup is ready.

③ Soak the kiwi in the hot syrup and leave it in the refrigerator overnight. Serve in your favorite dish and enjoy the aroma. The kiwi is also beautiful when it has become slightly translucent after being submerged in the syrup.


[Tip] Slicing kiwi lengthwise gives it a different look than usual.

Kiwi that has been left overnight and herbs are perfect for breakfast or a snack. This time, we'll introduce three different variations using the "Kiwi and Herb Marinade" we made.

1. Caprese with Mozzarella Cheese


First, remove the kiwi from the syrup and place the mozzarella cheese in a bowl. Next, add a generous amount of olive oil and black pepper and mix. The milky texture of the mozzarella pairs perfectly with the refreshing acidity of the kiwi.

2. Place on yogurt


Remove the kiwi from the syrup and place it on yogurt. If you prefer it sweeter, try adding honey. Add any remaining rosemary to a plate for a beautiful presentation.

3. Detox Water with Syrup


Syrup made by soaking kiwi fruit overnight is packed with water-soluble vitamins. Mix it with carbonated water and enjoy it like detox water. You can also add honey to taste! It's also delicious when you add a little herb and drink it warm.
