A new original recipe for home use has arrived from Mr. CHEESECAKE, the creator of the "best cheesecake of your life!" This time, we'll show you how to make the currently popular "firm pudding." We'll show you how to make the rich, creamy "best pudding of your life," which uses a generous amount of cream cheese, just like Mr. CHEESECAKE.

HOW TO MAKE
Misty's "Italian Pudding"

■Ingredients


Quantity: 1 17cm pound cake pan or 5 150ml cups

《Caramel Ingredients》
・40g granulated sugar
・15g water
・15g hot water

《Pudding Mixture Ingredients》
・100g cream cheese
・4 whole eggs
・100g heavy cream
・200g milk
・A pinch of vanilla
・60g condensed milk
・20g granulated sugar


Eggs are the star of this pudding. And while you can taste the eggs, the key is to add richness with cream cheese and condensed milk. Cream cheese is necessary for texture, but it's also added to add richness.


■How to Make


This recipe uses a round cup. Of course, you can also make it in a pound cake pan.

① Put granulated sugar and water in a pot and heat. When it turns brown, add hot water and turn off the heat.

[Tip] It's recommended to leave it slightly burnt, as this will create a bittersweet caramel.


Pour into the mold before the caramel hardens, making sure it spreads evenly to the bottom.

② Add the granulated sugar and condensed milk to the cream cheese and mix.


③ Add the eggs to ② little by little in 2 or 3 batches and mix well.

④ Put the milk, cream and vanilla in a saucepan and heat to around 50°C.

[Tip] We recommend adding a generous amount of vanilla.

⑤ Gradually add ④ to ③ while mixing.


⑥ Place ⑤ into the mold that you previously poured the caramel into in ①.


⑦ Place the pudding mold in a heat-resistant tray and pour in hot water until it is about 80% full of the pudding mixture, then bake in a 160° oven for about 30 minutes. (If making it in a 17cm pound cake mold, bake it in a 160° oven for 40-50 minutes.)

[Tips] Cook it so that it doesn't brown on the outside. Use plenty of water as the water will evaporate when baking in a bain-marie.

8. After baking in a bain-marie, remove from the heat and chill in the refrigerator for 2-3 hours.

9. Once cooled, remove from the mold and it's done!


If you bake it in a pound cake mold instead of a pudding mold, you can make it in the shape of Mr. CHEESECAKE.
