The fourth in the home recipe series created by the chef of "Mr. CHEESECAKE" (commonly known as Mischi) is the recipe for "The Best Tiramisu of Your Life"!

While based on classic tiramisu, the beauty of the cross-section when cut and the melt-in-your-mouth texture created by freezing it create a new sensation. First, enjoy it with your eyes, and then savor the aroma and sweetness that spreads as it melts. By the way, this is an "alcohol-free tiramisu" that can be enjoyed by people who don't like alcohol and even children. Be sure to give it a try at home.


HOW TO MAKE "The Best Tiramisu of My Life"



■Ingredients (for one 22cm pound cake pan)


・Mascarpone (200g)
・Kiri cream cheese (50g)
・Condensed milk (20g)
・Egg whites (2)
・Granulated sugar (20g)
・45% fresh cream (200g)
・White chocolate (20g)
・Hojicha (roasted green tea) (2g)
・Butter (10g)・Brown sugar (30g)
・Marie biscuits (to taste)
・Cocoa powder (to taste)
【A】※Mix the following ingredients beforehand:
・Instant coffee (15g)
・Hot water (90g)
・Granulated sugar (10g)
■Directions

① Beat the mascarpone and Kiri cheese well to soften them, then mix in the condensed milk.

② Put the butter in a pot and heat it until browned, then add the heavy cream and roasted green tea and bring to a boil again.



③ Add the white chocolate to the boiling cream and melt it. Leave it for about 10 minutes to allow the aroma to infuse, then strain the tea leaves and whisk while cooling in ice water.





④ Add the brown sugar to the egg yolks and heat over a double boiler while whisking until the mixture thickens.


【Point】 Whip thoroughly until it forms a thick, ribbon-like consistency.


⑤ Add granulated sugar to the egg whites to make meringue.


【Point】 Whip the meringue until it forms stiff peaks.


This is what the ingredients look like at this point

⑥ Mix ① and ④ together, then add ③.





⑦ Add ⑤ to ⑥ to complete the dough.



【Point】Mix in two batches, and mix the meringue in a cutting motion.


⑧Soak the biscuits in the coffee [A] prepared in advance and line the mold, pour in the batter, place the biscuits on top, and then top with another layer of batter.



9. To finish, sprinkle with cocoa powder and freeze overnight. It's done! (If refrigerating, chill in the refrigerator for about 2 hours.)
