Enjoy the new summer menu at Bvlgari Hotel Tokyo. Authentic and contemporary Italian cuisine created by three-star Michelin chef Niko Romito

Jul 27, 2023
Located on the 40th floor of the Bvlgari Hotel Tokyo, Il Ristorante Niko Romito offers authentic, contemporary Italian cuisine overseen by three-star Michelin chef Niko Romito. A new menu has been introduced that embodies the flavors of Mediterranean summer, the elegance of Bvlgari, and Niko Romito's philosophy.

A journey through Italian culinary traditions evolved through an innovative approach
One of the chef's signature appetizers, "Glacéd Eggplant with Tomato, Basil, Capers and Olives," brings together the flavors of Italian summer. The dish is baked in the oven, then coated with an eggplant glaze and heated repeatedly in the oven. This complex cooking process, combined with the thickness and texture of the eggplant slices, allows you to experience a whole new side of this vegetable.

"Homemade Tortelli with Panzanella Flavor, Burrata Cream and Basil" is one of our new pasta menu items. "Panzanella" is a regional Italian dish made with tomatoes and bread, typically eaten as a salad. We've transformed this familiar ingredient into an unexpected and sophisticated tortelli, and the burrata gives the dish a creamy, rich finish.

Additionally, "Honey Mousse and Peach Sorbet" combines refreshing peach sorbet with a light mascarpone and honey mousse, a dessert that expresses the flavor of Italy using a generous amount of Japanese peaches.
