Mont Saint Clair's new parfait, created by pastry chef Hironobu Tsujiguchi, will be available from May 18, 2023. This beautiful parfait is made with multiple layers of various ingredients, primarily blueberries and fromage. Reservations will be accepted exclusively through the online shop from May 9, 2023, and the parfait will be available in limited quantities.

A parfait featuring sweet and sour blueberries, several types of fromage, and Hokkaido haskap, a fruit said to grant eternal youth and longevity. Blueberries are the main ingredient, and various fromages, including cream cheese, mascarpone, fromage blanc, and cheddar cheese, are combined to create different textures, creating a smooth, rich, sour, and salty flavor.
 
The sauce and jelly use haskap, which has a strong sour taste and is highly nutritious, achieving a perfect balance of sweet and sour. The texture is enhanced by the addition of sable and feuillantine cookies, and the fruity chamomile jelly at the bottom leaves a refreshing aftertaste. Decorated with candy ribbons and edible flowers, one of the pastry chef's techniques, this delicate and elegant parfait is like a work of art.
