The Vietnamese cuisine he creates has its roots in his mother, and he says that her secret "dashi" recipe is important. One of the reasons for its popularity is the variety of dishes made using this secret stock.

Based on the Vietnamese cuisine made by his mother, Andrew incorporates the essence of French cuisine he has cultivated, and adds a touch of Hawaiian culture to create modern Vietnamese cuisine never before tasted, and the dishes are visually stunning.
