Kibiya Bakery, a hugely popular shop in the backstreets of Kamakura. A gentle taste made with homemade natural yeast. [This Week's Bread: Vol. 6]

Aug 7, 2019
In this week's Bread of the Week, the FASHION HEADLINE editorial team introduces the latest breads. For our sixth installment, we're featuring Kamakura's popular bakery, KIBIYA Bakery!

KIBIYA Bakery

Among the many bakeries in Kamakura, KIBIYA Bakery stands out as one of the most popular. This woodsy shop, with its sign featuring a cute cat illustration, is always bustling with locals and tourists alike. Made with homemade natural yeast and a blend of stone-ground whole wheat flour from pesticide-free domestic wheat, rye, and sea salt, the bakery offers a gentle-tasting bread without preservatives or additives. The bakery is currently open at the Isetan Shinjuku store until August 13th, where they are also selling limited-edition breads.

Kuromitsu Bread
________________

Kuromitsu Bread (1 piece 216 yen, 2 pieces (¥422) The "Kuromitsu Bread" is heavy and chewy, almost like a steamed bun. The rich flavor of black syrup and a hint of saltiness create a simple, nostalgic taste. One bite will instantly warm you up. Its relaxed, gentle flavor makes it perfect for breakfast, or as a snack, savored with a carefully brewed cup of coffee.

Apricot Bread
________________

Apricot Bread (1 loaf 821 yen, 1/2 loaf 411 yen)

This shop offers several types of bread, and the one we especially recommend this time of year is their "Apricot Bread." Made with organic apricots grown without pesticides, the bread dough has a sour taste from the natural yeast, and the sweet and sour taste of the apricots creates a refreshing and delicious combination. It's delicious enough without any toppings, but if you toast it lightly and spread butter on it, you can enjoy the perfect balance of sourness and richness.

Okayama Shirarei Danish

Don't miss out on this special taste, where the refreshing sweetness of Shirarei and the buttery flavor of the croissant dough fill your mouth!
