PIERRE HERMÉ PARIS will be focusing on one flavor each month and offering a variety of menu items for "Fetish." The limited-time flavor, "Envie," a combination of violet, cassis, and vanilla, is available at Pierre Hermé Paris boutiques and online boutiques until May 28th.
"CœurEnvie" (3,456 yen / approx. 13cm)
The patisserie "CœurEnvie" (3,456 yen) features a biscuit garnished with firm almond chips, paired with blackcurrant compote and violet-flavored mascarpone cream. The appealing acidity and rich flavor of the blackcurrant and violet are nicely tempered by the delicate and mellow flavor of vanilla. A single-portion "Envie" (756 yen) is also available.
"Saint-Honoré Envie" (3,780 yen / approx. 15cm)
"Saint-Honoré Envie" (3,780 yen, single portion 864 yen) is a combination of cassis, vanilla, and violet, giving it a more vibrant and rich flavor than traditional Saint-Honoré. Other flavors include "Tarte Envie" (864 yen), a biscuit infused with cassis juice and topped with various berries, and "Choux" with a crispy exterior and a crumbly interior. "Chou Envie" (756 yen) and other sweets will also be available. Also not to be missed is "Surprise Envie" (648 yen), a meringue shell filled with violet-flavored vanilla mousseline cream and blackcurrant compote.

Furthermore, "Heaven" on the second floor of Pierre Hermé Paris Aoyama offers a dessert plate where you can enjoy a little bit of each of Envie's various sweets.
