Hilton Tokyo will be hosting a dessert buffet (September 14th to November 4th) and selling take-out sweets (October 1st to 31st) at the Marble Lounge on the first floor and the patisserie FILOU on the second floor, with the theme of "A World of Halloween Tricks," in which a slightly more grown-up, slightly devilish Alice has wandered into.

The dessert buffet "Alice in Halloween Tricks," held at the Marble Lounge, will retain the overwhelming world view created by story-telling desserts and decorations, but will have a revised balance between sweets and light meals, revamping the dessert buffet contents for the first time in 30 years. This new dessert buffet, themed around a slightly more grown-up Alice wandering into a world of Halloween tricks, offers approximately 20 desserts and 10 types of salty snacks (snacks), twice the previous number, in an entertaining space with five hidden tricks, perfect for the autumn of art.
The desserts, with their chic red and black hues, are inspired by the grown-up Alice and feature autumn fruits and various spices for a cute and grown-up look. "Her Majesty Alice" is a chestnut bavarois sandwich with pear, wild strawberry, and red currant, coated in chocolate powder. The crispy cookie dough and crown-like chocolate topping will make your heart flutter. "Is It a Tea Party in Crazy Time!?", made with Valrhona, a quintessential chocolate, is a clock-shaped tart with a refreshingly sweet and tart Valrhona Manjari ganache, raspberries, and a hint of aniseed.
"The Queen of Hearts' Arrangement"
The rose-flavored Tarte Tatin, "The Queen of Hearts' Arrangement," is made with apples stewed in caramel and cinnamon, coated in whipped cream and rose-flavored glace. Other items on the menu include "Hatter," a traditional French canelé coated in coffee and chocolate; "Drink Me," a sophisticated blend of beets and calamansi, a miracle fruit perfect for a grown-up Alice; a dark red and white "Chocolate Fountain"; and "Lemon Tea Scone."

In the "Is it a sweet or a savory snack?" corner, collaborative items by Executive Chef Thomas Jacoby and Executive Pastry Chef Osamu Handa are lined up just like the twins Tweedledum and Tweedledee from the story.
The snack counterpart to "Dum's Open Face Cake," a chocolate sponge topped with various berries, is "Dee's Open Face Cake," a black olive-infused focaccia sandwich filled with smoked salmon and cauliflower mousse. There are five different types to enjoy, including "Dam's Twin Cheesecake," which combines salted cheese sable with light and fluffy fromage cru; "Dee's Twin Cheesecake Style," which is made with sour cream and tomato confit and dill; "Dam's Orange Dip," which is made with grissini dipped in burnt caramel cream made with blood orange; and "Dee's Homemade Dip," made with gazpacho.

In addition to Alice desserts, the Halloween area, filled with skeletons and witch's houses, offers elegant yet subtly scary sweets and snacks. Guests can enjoy the chefs' playful Halloween treats, such as "Heartbroken Witches," a milk chocolate mousse based on pain d'epices with a hint of paprika and mandarin jelly and crunchy chocolate nails pierced inside; "Witch's Rules," a black waffle drizzled with dark cherry sauce to resemble blood; and the sensational black and red "Squid Ink Pasta Bloody Incident."
Introduced in 2017, the hotel's dessert buffet will be the first to feature projection mapping, as well as new trick art. Enjoy a fusion of real food and entertainment that cannot be captured in photos alone.
