
The Living Pavilion by Aman at Aman Kyoto (Jugencho, Okitayama, Kita Ward, Kyoto) will be offering a new recipe for its summer favorite, "Muskmelon Shaved Ice," for a limited time from July 1 to September 30, 2022. Executive Pastry Chef Matsuo Hiroyuki's "Muskmelon Shaved Ice," a popular dish every year, is a luxurious treat made with an entire domestic muskmelon. The ice, made from shaved, frozen 100% melon juice, has a crunchy texture, and the mellow aroma and juicy sweetness will fill your mouth, just like biting into a whole melon.

Two melon balls, one of muskmelon and one of rich red-fleshed melon, are lovingly arranged in a gorgeously hollowed-out melon container. Served together is a lightly sweet Wasanbon crème chantilly. Hidden within the ice are Tahitian vanilla ice cream with a rich aroma and smooth texture, and red-fleshed melon balls. The flavor is further enhanced when drizzled with the accompanying red-fleshed melon sauce made with condensed milk. After eating about half of it, we recommend topping it off with champagne for a unique and exquisite adult float. Enjoy a refreshing moment in the lush forest garden during Kyoto's hot summer.

He develops original sweets using the techniques and overflowing sensibility cultivated over more than 35 years of experience at luxury hotels in the Kansai region. In 2019, he was appointed Executive Pastry Chef as one of the opening members of Aman Kyoto, and developed an afternoon tea featuring Western-style sweets arranged in a two-tiered bento box, reminiscent of Japanese sweets, providing guests with a moment that is both visually and palatably delightful. As a confectioner, he also creates displays and has won awards such as the Osaka Governor's Award and Grand Prize in a confectionery contest.
