At the same time, Shinsuke Nakajima, who was appointed chef pastry chef at Hotel New Otani, opened Pâtisserie Satsuki. He has introduced many popular creations, including an original collection that expresses familiar ingredients with a rich imagination, and the "Super Series," which generously uses the finest, carefully selected ingredients, and continues to delight and inspire. The store will be stocking a wide variety of exquisite sweets, each priced at over 3,000 yen, including the "New Extra Super Melon Shortcake" (4,104 yen), made with a Shizuoka-grown muskmelon, squeezed from a single tree for its concentrated flavor, and made with brown rice and eggs from chickens raised on a brown rice diet, and the "New Extra Super Amaou Shortcake" (3,240 yen), generously stuffed with Hakata Amaou strawberries. In 1998, he opened the world's first pastry boutique, bearing his name, at Hotel New Otani. The "world of taste, sensibility and joy" envisioned by this genius pastry chef has influenced the food culture of Hotel New Otani, and Pierre Hermé has also developed macarons incorporating Japanese ingredients and flavors, and collaborated with various hotels.
Nakajima Shinsuke
Grand chef of Hotel New Otani. In 2002, he won the overall prize as a member of the Japanese national team at the World Pastry Championship. In 2009, he led the Japanese national team to victory at the World Patisserie 2009 as taste director. He fully demonstrates his commitment to ingredients and has created the "Super Sweets Series", represented by the painstakingly crafted "Super Melon Shortcake".
