Born out of the American craft food movement, Bean-to-Bar Chocolate is a new chocolate category that emphasizes the commitment of its ingredients and makers. It refers to the entire chocolate-making process, from bean to bar (cocoa bean selection, roasting, grinding, tempering, and molding). There are currently nearly 600 Bean-to-Bar manufacturers worldwide, and the market in the United States, where it originated, is estimated to be approximately 40 billion yen. It began to spread in Japan around 2014, with approximately 130 brands, making it second only to the United States. Bean-to-bar manufacturers are still being born today.
 
 
About Dandelion Chocolate
 
 
Founded in 2010 by Todd Masonis (center right in the photo) and others. After selling the web business they co-ran in 2008, they began making chocolate in a borrowed friend's garage. Returning to the original manufacturing method that has been in place for over 100 years, their quest to recreate authentic chocolate resulted in Bean-to-Bar chocolate.
At Dandelion Chocolate, we visit all of the producers of the cocoa beans we use, sometimes discussing and negotiating with them about the process from fermentation to drying, before importing them directly. While the bean-to-bar boom has seen the development of various methods, we continue to pursue simple deliciousness by using only single-origin cocoa beans and organic cane sugar to ensure the pure, authentic flavor of the cocoa.
In February 2016, we opened our first Japanese store in Kuramae, Tokyo, marking our entry into the Japanese market. We also have stores in Ise, Mie, and Omotesando, Tokyo. (As of January 2022)
