
Human Web, operator of Gumbo & Oyster Bar, is opening a new oyster bar, THE CAVE DE OYSTER, in the Yaesu underground shopping mall at Tokyo Station. Designed to cater to the unique needs of its location near Tokyo Station, the bar offers not only table seating but also standing seating for individuals waiting for bullet trains or long-distance buses, as well as counter seating where the head chef will prepare your meal in front of you. The interior is inspired by a champagne cave, taking advantage of the unique location of the underground shopping mall and maximizing the ceiling height to create a relaxing atmosphere. A wine dispenser system in the center of the bar offers over 40 types of wine by the glass, including premium vintages. Self-service with a prepaid card allows for a casual, standing dining experience. In anticipation of the Tokyo Olympics, the menu and tableware incorporate Japanese culinary culture. Furthermore, the company is committed to the safety of its oysters, and has introduced the world's first oyster purification system that uses deep ocean water. Deep ocean water is seawater that is found at depths of 200 meters or more, where sunlight does not reach, and its cleanliness, rich nutrients, and low temperature are used to purify oysters. This system has been named "Organic Refined Oysters," and has been available at directly managed stores since August of this year.
