Dak Galbi Set
Dak Galbi is a signature dish from northern Korea. "Dak" means chicken, meaning "chicken ribs." The chicken is marinated in Korean chili paste and 12 spices and then cooked sous vide (low-temperature vacuum cooking) to create tender meat with a rich, spicy flavor. Sesame leaves, cabbage, carrots, and sweet potatoes are slowly cooked in the oven, mixed with the chef's special kalbi sauce. Dak galbi, drenched in a vibrant, spicy red sauce, is mouthwatering, isn't it?

Just like ramen is popular in Japan, gukbap is a beloved soup dish in Korea. Pork bones and meat are simmered for a long time, and aromatic vegetables are added to maximize the flavor. Braised quail eggs are the perfect garnish, balancing the spiciness of the dak galbi with the richness of the gukbap soup.



Kimchi-Jjim Set
Kimchi-jjim is one of Korea's most popular dishes. "Jjim" means steamed food in Korean. It's a long-steamed dish made with pork, aged kimchi, garlic, green onion, and ginger. We've modernized this classic recipe by tossing belly meat from "Koisuru Buta," a brand of pork from Katori City, Chiba Prefecture, with aged kimchi and vegetables and cooking it sous vide (low-temperature sous vide) for 16 hours. The low-temperature sous vide method brings out the sweet and spicy flavors of the dish, creating a perfect match between the savory flavor of the pork and the tartness of the kimchi.

The crunchy, sweet and spicy lotus root adds a touch of texture to this kimchi-jim set, adding a touch of variety to your meal.

Rich, clear pollack soup has long been a health-conscious dish in Korea. This soup, simmered with pollack and nutritious fresh local vegetables, will energize you from the inside out and is perfect for a hot summer day.
