Legendary Brooklyn steakhouse Peter Luger opens its first Japanese store across from Ebisu Garden Place

In September 2021, Wondertable Co., Ltd. will open the Tokyo branch of Peter Luger Steak House (hereinafter referred to as Peter Luger), a top-class steakhouse with a 130-year history founded in Brooklyn, New York. The restaurant will be located in a three-story brick building along Kusunoki-dori Street, across from Ebisu Garden Place. :

■About the legendary steakhouse "Peter Luger"
Peter Luger has popularized dry-aged beef steaks around the world and is known as the pinnacle of renowned steakhouses. It is a long-established steakhouse that has been ranked highly for over 30 years in the Michelin Guide as well as the Zagat Survey, a rating service conducted by general customers.

■130 Years of History
In 1887, German immigrant Peter Luger and his nephew Carl opened the restaurant "Carl Luger's Café, Billiards and Bowling Alley." After Carl's death, the name of the restaurant was changed to "Peter Luger," and it became better known as a steakhouse. After Peter's death in 1941, his son Frederick took over the business. However, due to poor business performance, the store was auctioned off and purchased by Sol Forman, of the Forman Family, a metal products manufacturer based across the street from the store. Sol was said to have been such a meat lover that he ate steak almost every day. After his death in 2001 at the age of 98, his two daughters, Amy Rubenstein and Marilyn Spiera, took over the business, and today, Amy and Marilyn's daughter, Jodie, is at the helm.

■The secret to the deliciousness of our signature dish

Our signature dish is the "Porterhouse Steak," a T-bone steak that comes in both filet and New York strip (sirloin) varieties. We use the finest prime beef graded by the United States Department of Agriculture (USDA), and at our Tokyo store, discerning staff selected by the owner carefully select and purchase the meat. The purchased meat is then aged using our unique dry-aging method in a dedicated aging room. This enhances the flavor and aroma and makes the meat even more tender.

The edges of the fully aged meat are cut off and sprinkled with salt, then the surface is grilled in a special broiler to lock in the flavor. The meat is then cut and placed on a plate with melted butter, then placed back in the broiler and grilled for a few minutes before being brought to the guest's table. The steak that has gone through this lengthy process is presented with a one-of-a-kind flavor that becomes more delicious the more you chew it.

The three-story brick exterior building incorporates elements of Brooklyn, New York, where the flagship store is located.

There will be a bar on the first floor where you can enjoy meals and cocktails. There will also be a takeout shop where you can purchase items to take home or as gifts.

Up on the second floor, you will find an open dining space with a 6-meter ceiling. At the back, a first for Peter Luger, an open kitchen will be installed, creating a lively atmosphere. The third floor has a theater-like layout, allowing diners to dine while overlooking the second-floor dining area, like balcony seating.

There will be seven private rooms, both large and small, which can be used for various occasions. A professional designer from New York has been hired for the lighting design, which brings together all elements, including guests and food, into the interior.
