On April 22, 2021, Chocolatier Palet d'Or, a specialty chocolate brand created by chocolatier Saegusa Shunsuke, who creates authentic chocolate from cacao beans, will open a new store on the first floor of EXITMELSA in Ginza 5-chome!



The new store opening this time, Chocolatier Palet d'Or GINZA, has a calm atmosphere designed with a "classic modern" theme. Starting with the Ginza store's exclusive "Sachertorte Blanc," we offer a wide variety of chocolates and chocolate confectioneries to brighten up your life for a variety of occasions, whether as a gift for a loved one or a treat for yourself...

We also offer takeout items unique to Chocolatier Palet d'Or, such as "Chocolat Nespa?!", a clear drink that lets you enjoy the aroma of cacao, and soft serve ice cream made from cacao. We hope you will enjoy our new store, where you can enjoy the careful craftsmanship of our homemade chocolate, which is made in-house from the selection and roasting of the cacao beans!

"Cacao Blanc" has a gentle flavor made with homemade white chocolate.

"Chocolat Noir" combines a moist dough with the flavor of fragrant chocolate and the texture of hazelnuts. This assortment of two baked goods shaped like round cocoa pods makes a perfect gift.




Until now, “Soft Palet d'Or” (from top of the photo: Blanc, Noir and Rendez-vous, 648 yen each (tax included)) was only available at the Kiyosato workshop or the Aoyama store.

We also offer other takeout items, such as the "Chocolat Nespa?!", a clear drink that smells of cacao! and the "Bean to Cocoa" drink made with homemade cacao powder, making it a new way to enjoy your walk around Ginza!


About Chef Saegusa Shunsuke>
He studied under the late Toshikazu Yasui, a leading figure in the world of Western confectionery, at the prestigious Hotel Plaza in Osaka. In 1991, he went independent and opened his own patisserie. After meeting the late Maurice Bernachon, a master chocolatier from Lyon, France, and receiving his training as a chocolatier, he opened his own authentic chocolate specialty shop, Chocolatier Palet d'Or, in Osaka in 2004 and in Tokyo in 2007. He then launched Artisan Palet d'Or Kiyosato, a bean-to-bar workshop that handles the entire process from cocoa beans to chocolate, in 2014.

In 2019, he opened the world's first bean-to-bar white chocolate brand, Chocolatier Palet d'Or Blanc. Handling over 10 tons of chocolate per year, he creates everything from cocoa beans to bonbons as a chocolatier, focusing on the original taste and aroma of the cacao, creating exquisite chocolates that are completely original and homemade, attracting widespread attention both in Japan and overseas.

It has been featured in numerous media outlets, including TV Tokyo's "Solomon Style" in 2010, NHK's "Today's Cooking" in 2014, and NHK's "Professional: Work Style" in 2018.

About Chocolatier Palet D'Or



This chocolatier, which opened in 2004 in Herbis Plaza Ent (Nishi-Umeda, Osaka) and in 2007 in Shin-Marunouchi Building (Marunouchi, Tokyo), sells over 50 types of bonbons and chocolate gateaux. The salon offers a variety of ways to enjoy chocolate, including original drinks and parfaits made with cacao, a cafe specially blended to go with the chocolate, bean-to-cocoa made with homemade cacao powder, and pairings of chocolate with champagne or whiskey.






In 2014, we opened a workshop in the Kiyosato Plateau where we handle the entire process, from carefully selected cocoa beans from around the world, roasting them to the optimum conditions for each bean, and finishing them into chocolate.
A bean-to-bar workshop where a chocolatier personally crafts chocolate from the bean stage, with an annual production capacity of 10 tons, is rare worldwide and the first of its kind in Japan. Surrounded by beautiful nature overlooking the Yatsugatake Mountains, the cool environment, similar to that of a European mountain resort, is ideal for storing cocoa and aging chocolate. With over 40 years of experience and a long history of working with a wide variety of chocolates, this bean-to-bar workshop is unique to Chef Saegusa. Our craft has won numerous awards, including the International Chocolate Awards 2019 Asia and World Championships, as well as the British Academy of Chocolate 2019 and 2020.
