U.I. International, a company that operates a food and beverage business utilizing historic local real estate and locally produced ingredients, will open a cafe and shop for "KUTEN.", a manufacturer and seller of sweets made with a variety of fruit from the Hokushin region of Nagano Prefecture, in Obuse Town, Nagano Prefecture, on April 24th.
The concept is "full stop."
The idea for opening KUTEN. came from the full stop, a symbol used to end a sentence or separate meanings. As a restaurant that processes ingredients and serves them to customers, we want to act as a bridge between producers and consumers. We want to deliver dishes that will please our customers. We want to use ingredients that would otherwise be discarded without waste. With these wishes in mind, we chose the name of the store and brand, "KUTEN.", which means full stop.
Using ingredients produced in the surrounding area and fruits that are not distributed in the market
The Hokushin region, one of Nagano Prefecture's leading fruit-producing areas, is a treasure trove of ingredients, from which a variety of raw materials are produced and manufactured, including fruits such as apples, strawberries, grapes, and peaches, as well as chestnuts, a specialty of Obuse Town, and fermented seasonings. Even the eggs, milk, and wheat used in the tart dough are produced in the surrounding area of Obuse Town. In particular, we actively purchase fruits that are not distributed in the market because they have small blemishes or do not meet our standards, and turn them into sweets, thereby working to create a new food cycle.
