This spring, Sébastien Bouillet, a pastry chef and chocolatier with stores in Lyon, France, and Japan, will be introducing new flavors of cookies made with carefully selected ingredients, as well as seasonal macarons and tartlets. Based on the traditional flavors of French pastries, he has added some twists to create seasonal treats that bring out the best in the ingredients.

Sébastien Bouillet, who operates in both France and Japan, will be introducing new seasonal sweets. The lineup will include richly flavored cookies that make use of the mellow aroma of butter and a variety of ingredients, as well as new macarons and tartlets that have been carefully crafted with the utmost attention to detail.
New for Spring 2021! Richly flavored "Cookies" that make the most of the rich aroma of butter and the taste of the ingredients.

New this spring are cookies, meticulously handcrafted in accordance with French tradition. Because these are standard items, the artisan's skill and exquisite craftsmanship are key to their flavor.

The cookies are baked slowly at a low temperature to achieve a crispy texture. While they are baking, the kitchen is filled with the aroma of toasted butter and flour. With just one bite, the rich aroma of butter and a rich flavor fills your mouth. Every step is done by hand by artisans, and this is a proud product that was perfected through repeated trial and error to achieve the true flavor of French confectionery, a natural golden brown, and a balance of pleasant texture and aroma.

Choose from three varieties: "Praline Rouge," which makes use of Lyon's famous praline rouge; "Citron Cannelle," which brings out the aroma of two ingredients, cinnamon and lemon; and "Fruysec," which has the texture of dried fruit and nuts and a deep flavor like fruit cake.

We also offer an "Assorted Varie" gift set containing an assortment of tartlets, florentines, and cookies.

Macarons are popular at the flagship store in Lyon, France. Sébastien Bouillet's macarons are baked with home-ground almonds added to the macaron dough, and are characterized by their crisp texture and fragrant aroma. A total of 18 varieties will be lined up in the display case, including premium macarons and limited-time flavors.

Starting this spring, five new flavors will be added to the lineup. We have a selection of macaron gifts available, including "Coco Kiwi", which makes the most of the refreshing taste of kiwi, "Abricot", which allows you to enjoy the fruity texture of apricot jam, "Citron Miel", a great combination of honey and lemon, "Chai", which is inspired by chai and is a blend of several spices, and "Pêche Lychee", which is sandwiched with peach jam.

Popular as a gift! "Tartlets" made with carefully selected ingredients and craftsmanship

"Tartlets" are made with moist tart dough filled with madeleines, financiers, etc., and combined with fruits and nuts. This is a specially crafted sweet that combines the best of French and Japanese culture, based on a classic French pastry, with some added twists. New seasonal flavors, made with carefully selected ingredients and finishing touches, will be added to this "Tartlet."

”Peche"
Peach-flavored madeleines combined with peach jam. The peach jam is made using dried white peaches from Nagano Prefecture, recreating the natural flavor of peaches.

"Fig"
Blackcurrant-flavored madeleines combined with fig and blackcurrant jam. In order to allow you to enjoy the fig flavor even more, dried figs are used in the jam, resulting in a concentrated fig flavor. The combination of blackcurrant and fig is a popular marriage in France.

"Coco Passion"
Passion-flavored madeleines made with coconut are topped with passion fruit crispies. Fine coconut is used in the madeleine dough and decoration, creating a tartlet that is all about coconut. The cute, plump appearance is also a highlight.

"Caramel Almande"
Caramel financiers are combined with crushed almonds and caramel. The financier dough has a hint of apricot flavoring added as a secret ingredient. The slowly simmered caramel has a deep aroma and rich flavor, while the coarsely crushed almonds add a crunchy texture for a delightful combination.

"Café Orange"
Coffee financiers are combined with homemade orange jam and orange pâté de fruit. Ground coffee beans are added to the madeleine dough, allowing you to enjoy its deep, rich aroma. The jam is made using oranges with the peel, resulting in a balanced flavor of sweetness, bitterness, and acidity. Bergamot puree is used as a secret ingredient in the orange pâté de fruit, creating a tartlet with a sophisticated taste.

"Chocolat Banana"
A combination of banana confit flavored with brandy and chocolate madeleine. Brandy-soaked bananas are slowly sautéed to bring out their richness and sweetness. Homemade tampoule tantalum (equal parts almonds and sugar ground into a powder) is used, allowing you to enjoy the richness of the almonds in the madeleine dough. Hazelnuts and banana chips add a delightful crunchy texture.

The wide variety of tartlets, with a focus on gorgeous finishes, also make great gifts. You can choose the size of your gift, from a pack of three to a large one, to suit the occasion.
