This course features muskmelons from Shizuoka Prefecture, a renowned muskmelon-producing region. As a specialty shop dedicated to "maximizing the flavor of fruit," we use our processing techniques to select ripe fruit and create recipes that maximize its deliciousness. This diverse menu offers a full muskmelon experience, with cutting and presentation tailored to the fruit's unique characteristics. 
The muskmelon course, in particular, is carefully crafted to capture the "elegant aroma" that inspired its name. Muskmelons are known for their exceptionally fragrant flavor. This course is crafted with a focus on the delicate aroma of muskmelon, along with its melt-in-your-mouth flavor. For example, the muskmelon is never cooked, allowing guests to savor its fresh aroma in its entirety. We slice a beautifully ripe muskmelon with just the right texture, and the elegant aroma that wafts from the cut surface. We want to deliver this aroma to our guests exactly as it is.
