Eat your vegetables even more deliciously! Dean & Deluca introduces new "plant-based" deli menu

With a desire to share the joy of food with many people, starting in spring 2021, we will be adding a "PLANT-BASED" category to our deli menu. We will be offering a variety of dishes to enhance your dining experience, from a single dish to more satisfying meals. We will also be introducing limited-edition lunch boxes and limited-time lattes made with plant-based milk.


Eat vegetables even more deliciously - PLANT-BASED MENU -


The "PLANT-BASED" vegetarian lifestyle, which is being adopted around the world, is full of ingenious ways to make seasonal vegetables even more enjoyable. Under the supervision of Chef Fumio Yonezawa, head chef of The Burn, a grill restaurant in Minami-Aoyama, Tokyo, this is a new take on a classic. DEAN & DELUCA's deli menu is about to become even more extensive.

Plant-based meals use all plant-based ingredients. They skillfully combine fruits, grains, nuts, and spices with the most delicious vegetables of the season. They're packed with plant-based nutrients like dietary fiber and vitamins, and are easy to digest. It's also said that actively eating vegetables, which are easy to grow and harvest, makes it easier to live an environmentally conscious lifestyle.

DEAN & DELUCA originated as a cheese shop. Hoping for a future where meat, fish, and vegetables can be enjoyed for a long time, we're launching deli meals that make vegetables even more delicious.

A variety of menus created in collaboration with Chef Yonezawa of sustainable grill restaurant "The Burn"


Chef Fumio Yonezawa, The Burn
"The Burn" serves simple dishes such as organic vegetable dishes, centered around aged domestic beef grilled over a powerful charcoal fire. Chef Yonezawa, the restaurant's head chef, moved to the United States at the age of 22. He had experience entertaining people with diverse diets at "Jean-Georoges" in New York, and began to pursue the question of how to please both meat lovers and vegetarians. His book "Vegan Recipes" (Shibata Shoten) is one of his books, and he is a chef well-versed in ways to make vegetables taste even better.

Kale and Mint Salad with Kiwi Confiture 580 yen (626 yen including tax) / 100g
DEAN & DELUCA's classic kale salad has been made plant-based. The flavor is enhanced by fennel, an essential herb in Mediterranean cuisine, sweet and sour kiwi confiture, and crunchy chopped almonds. The salty texture of the popcorn sprinkled on top adds a nice accent.


Mixed Grain and Fruit Salad with White Balsamic Dressing 450 yen (486 yen incl. tax)/100g
This dish is satisfying, with the enjoyable crunchy texture of the mixed grains. It layers a variety of flavors, tossing in fruits such as strawberries, oranges, and dried cranberries with marinated red onions, cucumbers, and fresh mint. The refreshing acidity of the white balsamic vinegar makes it a refreshing dish to enjoy.


Spicy Tofu Frites with Tahini Sauce 420 yen (454 yen including tax) / 100g
Silken tofu is fried tofu coated with spices such as cumin seeds. The outside is crispy and fragrant, and the inside is soft and fluffy. Sliced red onion adds a gentle spiciness and color to whet the appetite. Enjoy by dipping it in tahini sauce, a rich Middle Eastern flavor made from sesame seeds.


Gansu and Asparagus Salad with Pistachio Genovese 550 yen (594 yen)/100g
This salad uses gansu (dried tofu), a common ingredient in China and Taiwan, prepared like pasta. The pistachios are used in two ways: crushed and in paste form, which gives the dish a rich flavor and texture. Served with large pieces of boiled asparagus, it's very filling.

Green Pea Guacamole 350 yen (378 yen incl. tax)/100g

Falafel, loved in the Middle East, is a plant-based dish made from mashed chickpeas that are fried with spices. This time, we used seasonal broad beans to create a beautiful color. Serve with plenty of guacamole made from green peas and avocado. It has a mild flavor and is the perfect accompaniment to alcohol.

A lunch box filled with delicious delicacies carefully selected by the chef to celebrate spring



A limited-edition lunch box filled with DEAN & DELUCA deli dishes will be available from March 12th. The "Plant-Based Box" is entirely plant-based, while the "Spring Lunch Box" features meat as the main ingredient. Both offer a variety of flavors.

Plant-based options now available in cafe drinks...Two oat milk drinks with healthy essentials



Oat milk is made from oats, which are rich in dietary fiber, calcium, and iron, which are often lacking in our bodies. This plant-based milk boasts a fragrant grain aroma and natural sweetness. When paired with coffee, tea, or matcha, it adds a fragrant flavor without overpowering it, expanding the aroma and flavor with every sip.


Oat Milk Matcha Café Latte 540 yen (Hot S / Iced M)
The mellow, astringent flavor of Uji matcha is combined with a shot of carefully brewed espresso, topped with slightly sweet oat milk. The complex flavor of maple syrup, made from maple sap, adds a bittersweetness to this matcha latte.


Oat Milk Chai Cafe Latte 540 yen (Hot S / Iced M)
An exquisite balance of black tea, spices, espresso, brown sugar syrup, and oat milk. This luxurious chai latte combines a rich flavor with a refreshing aftertaste, and has a mellow aroma, natural sweetness, gentle body, and a pleasant bitter taste.

During the period, other espresso drinks can also be customized with plant-based milk. Choose from the soft sweetness and fragrant flavor of "oat milk," or the rich flavor of "soy milk" with a subtle soy aroma. Enjoy it according to the temperature and your mood as the season gradually turns warmer.
